Peaches are the perfect fruit for late-summer. Often harvested in July and August, these decadent stone fruits offer a mouthwatering blend of sweet & tart, with a hint of nostalgia. You can use incorporate them into desserts, savory dishes or just eat them fresh off the tree. One of our favorite ways to prepare peaches is by grilling them, topping them with butter, cinnamon, honey and a pinch of sugar. Optionally, grilled peaches are wonderful with vanilla ice cream or frozen yogurt. This warm-weather tradition encourages enjoying long dinners on the porch, as the mid-summer sun lingers late in the sky.
Super stone fruit
You will want to start with fresh, ripe peaches. Farmer’s Market peaches are often the freshest and are often organic. Otherwise, grocery store peaches will do. The best peaches are firm but with a slight softness. Additionally, this fruit also offers many nutritious benefits, including:
- The peels and pulp of peaches offer potent anti-oxidants to support your immune system and combat free-radicals.
- Peaches contain potassium, which helps with the body’s regulation at the cellular level. Essentially, consuming potassium ensures nerves are properly signaling, carbohydrates are utilized properly and organs are functioning.
- These fruits are rich in anti-tumor phenolic and carotenoid compounds.
Furthermore, this recipe can easily be made unmedicated or infused with cannabis. Infusing with cannabis makes for the perfect way to medicate and simultaneously satisfy a sweet tooth. We’ll include the cannabis-infused ingredients here, but it’s up to you!
What You’ll Need:
- High-grade grilling aluminum foil
- Cooking oil, such as coconut or olive
- 4 halved peaches
- 1/4 cup brown sugar
- 2 tablespoons Butter
- Pinch of cinnamon
- Granola
- Assorted chopped nuts
- Honey (optional: medicated)
- Vanilla ice cream or frozen yogurt (optional: medicated)
Remove pits from the peaches and brush each half peach with oil. Mix together the brown sugar, butter, and cinnamon.
Next, stuff each half with the sugar-cinnamon-butter mixture, then shape aluminum foil around each peach half.
Place the aluminum foil packets on the grill for 15 minutes. Use tongs to occasionally turn the packets, ensuring each side is equally grilled. You can carefully open the aluminum to check the progress — but be very careful, they will be hot!
After about 15 minutes, remove the peach packets from the grill and let them rest.
Carefully open each aluminum foil packet and transfer the halves to bowls.
Then, drizzle honey on top — we recommend using Flourish’s Honey in the Dank, which is made from local desert honey. Comes in 200mg dose, with a 1:1 THC to CBD ratio. Purchase at High Mountain Health for $58.
Vanilla ice cream is another great option. CREAM Boutiques offers a decadent, medicated vanilla ice cream, with 25 mg of THC. Available at High Mountain Health, starting at $14.
Finally, sprinkle assorted nuts and granola on top for a savory crunch.
Enjoy!
